Jamaican Banana Bread Recipe

I like baking bread, particularly banana bread. This Jamaican banana bread is a little bit of the tropics splashed in because of the addition of darkish rum, coconut and lime.  

Jamaican Banana Bread

Cook Time: 1 hour
Total Time: 1 hour, 10 minutes
Makes: 8 servings

Ingredients:
2 C flour
3⁄4 tsp baking soda
1⁄2 tsp kosher salt
1 C sugar
1⁄4 C unsalted butter, melted
2 massive eggs, room temp
1 1⁄2 C mashed ripe bananas
1⁄4 C plain yogurt
3 Tbsp Bacardi Black Rum
1⁄2 tsp pure vanilla extract
1 C toasted coconut

Glaze Ingredients:
3⁄4 C powdered sugar
4 tbsp lime zest, divided
1 1⁄2 tbsp Bacardi Black
1⁄2 C toasted coconut

Jamaican Banana Bread
Directions:

  1. Preheat the oven to 350 levels and put together a loaf pan with nonstick baking spray.
  2. Whisk collectively flour, baking soda, and salt. Set apart.
  3. Add sugar and melted butter collectively in a mixing bowl. Mix along with an electrical mixer.
  4. Add 1 egg at a time, mixing after every addition.
  5. Mix in bananas, yogurt, rum, and vanilla. Continue mixing till mixed.
  6. Slowly add the dry substances.
  7. With an electrical mixer, beat after every addition till mixed.
  8. Fold in 1⁄2 cup of coconut with out over mixing.
  9. Scoop the batter into the ready baking pan.
  10. Fold in 1⁄2 C coconut into the batter
  11. Bake at 350 levels for 60 minutes. Insert a toothpick within the heart of the loaf if it comes out clear the bread is finished.
  12. Take the bread out of the oven and place on a cooling rack for a number of minutes.
  13. Flip the loaf pan over and place it on a cooling rack.

Glaze:

  1. Whisk collectively the powdered sugar, lime zest and rum
  2. Drizzle it over the nice and cozy bread
  3. Sprinkle lime zest and toasted coconut on high
  4. Set apart to chill earlier than slicing and serving.
